Lutefisk is a traditional dish of the Nordic countries, particularly Norway and Sweden. It is made from aged stockfish (air-dried whitefish) or dried/salted whitefish and lye (sodium hydroxide). The name "Lutefisk" translates to "lye fish," referencing the significant part lye plays in its preparation.

The process of making Lutefisk involves soaking the dried fish in cold water for several days, then in a solution of cold water and lye for an additional few days. The lye causes the proteins in the fish to swell, giving the fish a jelly-like consistency when cooked. After the lye treatment, the fish is soaked in cold water again for up to six days to remove the lye.

The result is a fish with a very distinctive texture, often described as gelatinous or jelly-like. The flavor is mild and somewhat fishy, and it's often served with a variety of accompaniments, such as butter, salt, and pepper, or in white sauce. It's also commonly served with boiled potatoes and green peas.

Lutefisk is traditionally eaten during the Christmas season and is a staple of many Norwegian-American holiday tables. Despite its unusual preparation method and unique texture, it's a beloved tradition for many people of Nordic descent.
